Chicken Teriyaki
(serves 4)
Ingredients:
- 4 tbsp soy sauce
- 2 tbsp sake
- 2-3 tsp ginger juice
- 3 or 4 chicken breasts
- 3 tbsp “ennea” Premium Extra Virgin Olive Oil
- 2 tbsp mirin
- 1 tbsp sugar
Instructions
Mix together the soy sauce, sake and ginger juice in a medium bowl. Prick the skin of the chicken breasts with a fork and marinate them for 1 hour in the sauce. Turn the chicken over several times. Heat the “ennea” Premium Extra Virgin Olive Oil in a frying pan. Remove the chicken from the marinade and cook it skin side first. Turn it over, reduce the heat and cook for 10 minutes with a lid on. Take out the chicken and drain the oil. Add the soy sauce marinade, the mirin, and the sugar to the pan and bring to a boil. Put the chicken back and cook for about 5 minutes over a medium-high heat to let the sauce thicken. Cover the chicken with the sauce. To serve, slice the chicken into strips, pour the remaining sauce over them and place in a heated serving dish.
